Mosaic Cellars

Handcrafted wine for the connoisseur.

You love wine.
We do, too.

But so much of the wine on the store shelf is just the same six grapes aged the same oak wood barrels. Thanks to country-level market syndication, wine is so defined and standardized that winemakers are left with little room to create anything unique. And it's wine lovers who lose out most.Saddened by a world of commoditized wine, we aspire to make art worthy of, and rewarding to, connoisseurs like you.Our mission? To make complex, compelling, and enjoyable wines for connoisseurs. Whether it's a different process, a different style, or a different expression of a varietal, our goal is to create something appreciatively and experientially “different” for you to taste, consider, and enjoy in every bottle.Get in touch to set up your own tastings, purchases, membership, or just to say hello :)

Handcrafted for the love of wine.

We source quality grapes from family vineyards that have been lovingly looked after and grown to full maturity. Our winemaking process is an homage to historical handmade wines of times gone by, featuring small-batch fermentation with extended maceration in an oxygen-rich environment, regular pigeage, and sur lie aging sitting perfectly still. The result? Fine wines of complex character where you can taste the journey from grape to glass.

  • OUR WINES AND VINTAGES

  • 2022 Cabernet Franc (Shiloh). Our inaugural vintage, only 25 bottles were produced. It is a rare collectors item and unavailable for sale.

  • 2023 Old Vine Sangiovese Rose (Givat Ada). This wine was made with red wine yeast after a light crush through a sieve. The wine was only in contact with the skins for a few minutes, resulting in a light pink color. Its dominant notes are sour apples and cotton candy, with strong grape seed tannins.

  • 2023 Cuvee Sauvage (Givat Ada, Shuva). This doubly wild fermented Syrah + Merlot blend features notes of sour cherries and plums with a medium body.

  • 2024 Muscat (Givat Ada). This dry Muscat aged perfectly still on its lees and oak for 8 months and features the signature "grape" aroma and palate of the varietal with a firm acidic body.

  • 2024 Syrah (Givat Ada). This wine aged perfectly still on its lees and oak for 8 months in a high-oxygen environment. It is light bodied and pleasantly supple, with dominant notes of sour cherries and silky tannins expressed in a long finish.

  • 2024 Merlot (Shuva). Still aging - coming soon!
